Maiorca wheat is an ancient Sicilian wheat, from which a type one flour is made that is much more digestible and nutrient-rich than 00 flour. Because of its many properties, Majorca, like all ancient grains, is much less allergenic than modern grains. In fact, Majorca can be taken by those with mild gluten intolerances other than celiac disease.

Being a type 1 flour, Mallorca, maintains a good degree of softness and workability, which improve the yield of many recipes.

Mallorca Type 1 variety wheat flour is used to prepare ancient Sicilian recipes, such as tasty and fragrant bread, or cakes, cookies and pizzas.

A great ingredient to include in one’s Mediterranean Diet.
